Your journey begins in Vodnjan, the global capital of premium olive oil. Whether at Oio Vivo or Chiavalon, you will master the art of tasting—warming the glass to release the grassy aromas and savoring the peppery 'kick' of polyphenols. The Farm & The Cheese
Hidden deep in the macchia bushes lies Kumparička, a rustic goat farm that operates on nature’s clock. You will meet the charismatic Aleš Winkler and his happy herd, tasting unpasteurized cheeses that rival the finest French chèvres. Aged in silence and paired with natural wines, this is a raw, honest, and incredibly delicious farm-to-table experience that connects you directly to the source of your food.
The Aromas & The Stone Town
The sensory journey continues at Histria Aromatica, a breathtaking botanical garden perched above the sea. Walk through fields of lavender, immortelle, and sage with views stretching to the Brijuni Islands. We conclude in Bale (Valle), the "Stone Butterfly." Walking its circular cobblestone streets feels like stepping into a movie set. Whether admiring the Soardo-Bembo castle or sipping coffee at the famous Kamene Priče jazz bar, you will soak in the slow, timeless rhythm of Istrian life.
The Stone Silence of Bale
We end our journey in Bale, a town made entirely of stone. Walking its narrow, circular streets feels like stepping into a movie set. We’ll stop at the famous Kamene Priče jazz bar or simply admire the Gothic-Renaissance architecture of the Soardo-Bembo castle, soaking in the slow rhythm of Istrian life.
