A Day in the Organic South
Where the land feeds you — and teaches you how.
South Istria moves differently. The sun stays longer, the stone is older, and the people who work this land have never needed to hurry. On the Meridiana day, you will not just visit a farm — you will become part of it. A private cooking class with ingredients grown steps from where you are standing, a lunch you made with your own hands, a walk among goats that have never heard of an itinerary, and a quiet hour in one of Istria's most perfectly preserved medieval towns. This is the south. This is Meridiana.
Experience Highlights
The Farm & The Animals A private farm tour through organic pastures and forests. Meet the herd, walk the land, understand where your food actually comes from.
Your Private Cooking Class A hands-on culinary experience for up to 6 guests — cooking with the farm's own goat cheese, seasonal vegetables, local honey, and ingredients harvested that morning. Exclusively yours.
Lunch You Made Yourself The table is set outdoors, in the middle of the farm. You eat what you cooked, with local wine poured alongside. There is no better meal than this one.
Bale — The Town That Time Forgot A short drive brings you to the medieval village of Bale — compact, perfectly preserved, completely unhurried. A coffee, a slow walk through stone streets, a moment of pure Istrian quiet before the day ends.
Your Istramore Chauffeur Private luxury Mercedes-Benz transfer from your hotel and back.
The Farm
There are places in Istria that exist entirely outside of tourism.
This is one of them.
A working organic farm in the hills of southern Istria — where goats graze in wild pastures, vegetables grow without chemicals, and the rhythm of the day is still set by the animals and the seasons. Your morning begins here, with a private tour through the land. You will walk the pastures, meet the herd, and begin to understand — slowly, without being told — what it actually means for food to come from somewhere real.
No screens. No itinerary. Just the farm, the air, and the sound of goats doing exactly as they please.
The Cooking Class
This is not a demonstration. You cook.
Your instructor works with what the farm has produced — goat cheese made that week, vegetables from the garden, honey from the hives on the property, herbs gathered from the surrounding fields. The recipes are simple. The ingredients are extraordinary. And the act of making something with your hands, in this place, with these people — that is the part you will not forget.
The class is private, for your group only. Maximum six guests. No strangers at your table.
The Lunch
When the cooking is done, the table is set outside.
Local wine is poured. The food arrives — made by you, from ingredients grown here, prepared in a kitchen that smells of fresh herbs and warm bread. The view across the southern Istrian hills is, to put it simply, extraordinary.
You will sit longer than you planned. That is entirely the point.
Bale
Every Meridiana day ends in Bale.
Four kilometres of winding road bring you to one of the most perfectly preserved medieval towns in Istria — compact, quiet, entirely unhurried. Stone streets that have not changed in centuries. A small café where the espresso is strong and the afternoon light is golden.
There is nothing you need to do here. That is exactly why we come.

FAQs
Do we need any cooking experience?
1
None at all. The class is designed for curious people, not trained chefs. If you can chop and laugh at the same time, you are ready.
What do we cook exactly?
2
The menu changes with the season and what the farm has available — that is part of the charm. Expect goat cheese, fresh pasta, seasonal vegetables, and something sweet involving local honey.
Is this suitable for children?
3
Yes — children love the farm, the animals, and especially the cooking. Let us know their ages when you inquire and we will make sure the experience is right for them.
Can Meridiana be combined with another Signature Journey?
4
Meridiana pairs beautifully as a full southern Istria day. For guests who want to experience both north and south, we can design a multi-day programme. Ask Ana Roberta.
