The Forest

Your day begins where Istria keeps its most guarded secret.

In the damp, ancient soil beneath the trees, a trained dog moves with focused intensity — nose pressed to the earth, searching for the tubers that have made this region legendary. You follow, quietly, through a forest that asks you to slow down and pay attention.

This is a private experience with a family that has hunted these woods across generations. Not a tour. Not a performance. A morning in the life of people who still live by the rhythms of this land.

The Table

From the forest, you come back to the estate.

Lunch is at the family table — handmade pasta, local cheese, their own prosciutto, and wine poured from barrels that have been resting patiently in the cellar below. The Malvasia is fresh, elegant, made from grapes grown on the terraced hillside outside the window.

There is nothing theatrical about this meal. It is simply honest food made extraordinarily well, by people who have been doing it this way for a very long time.

The Oil

After lunch comes the tasting that surprises even those who think they know olive oil.

Ipša extra virgin olive oil was awarded by Flos Olei 2026 — one of the most respected olive oil guides in the world — as among the finest produced anywhere on earth. What happens if it rains?

Truffle dogs work in all weather — in fact, the forest after rain is when the scent is strongest. Your chauffeur vehicle is always warm and dry.
